Welcome to November!
This is the season when I crave warm apple pie. It is truly one of lifes wonderful simple pleasures. With Thanksgiving on its way and Autumn in full swing I want to share my best apple pie recipe with you! You won't be disappointed.When I create this pie it is free of Peanuts, Tree nuts, Dairy, Wheat and Gluten, and Egg. It is really simple and smells fantastic too!
Gather the following:
Glass pie plate
12 large marshmallows, cut lengthwise on the diagonal creating 24 pieces
5 large Golden delicious apples: peeled, cored and sliced
1/2 tsp Salt
1/2 tsp Cinnamon
1 lemon for juicing
1 box Annie's Snickerdoodle Bunny Cookies
1/2 cup white granular sugar
Butter Substitute (I use Earth Balance)
First create crust:
- Melt butter - a 1/4 cup at a time, ready to melt more if necessary.
- Crush cookies
- Mix the melted butter and crushed cookies in a bowl (think old fashioned grahmcracker crust texture) and add melted butter as necessary until you achieve the desired crust texture. (I go a little easy on the butter)
- Once you are happy with your texture, press in to glass pie plate
Now for your apple amazingness!
- Place your prepared apples in your pie plate atop your cookie crust. (I go for pretty)
- Squeeze one lemon over your prepared apples.
- Sprinkle the sugar evenly over the whole pie.
- Sprinkle salt and cinnamon atop apples, amount of your liking (I prefer 1/2 tsp of each)
- Dot the top with pats of butter

Bake at 350 degrees until apples are tender. Remove from the oven and top with marshmallows. I create concentric circles resembling Mumm petals. Replace into the oven and bake till marshmallows are browned slightly. You'll have to keep an eye on this so you don't over cook and totally melt the marshmallows.
The reason I don't give you a specific set of baking times is because some people prefer the apples firm and others soft. If you prefer your apples softer the cooking time will be a little longer. The whole thing really does not take very long as there are no eggs to cook you are really just melting it all together and softening your apples. Also your choice of marshmallows will brown at varying rates and you have to babysit them. Oh my gosh it smells so good!
I prefer to bake this early in the day and allow the pie to rest for a while prior to serving. Due to the marshmallows I do not allow anything to touch the top - so if you need to cover it try inverting a large bowl that will not come in contact with the pie while it rests on your counter top.
